Cinnamon Waffles


Once every few weeks we like to make breafast for dinner.  Taylor picked waffles.  He really likes waffles.  I made him cinnamon waffles. They hit the spot, not to mention they were easy on the wallet.  I think breakfast for dinner even once a week is a great idea.  The recipe is called "Waffles of Insane Greatness". That is what they are.  Great.  I added a teaspoon of cinnamon and 1/2 teaspoon of nutmeg to the batter.  YUMMY.  This recipe is a keeper.


Waffles of Insane Greatness


Ingredients:

� cup all-purpose flour

� cup cornstarch

� tsp. baking powder

� tsp. baking soda

� tsp. salt

1� tsp. sugar

� cup whole milk

� cup buttermilk

1/3 cup vegetable oil

1 large egg, lightly beaten

� tsp. vanilla extract

Directions:

In a medium mixing bowl, combine the flour, cornstarch, baking powder, baking soda, salt and sugar. Whisk together to blend. In another mixing bowl, beat together the whole milk, buttermilk, oil, egg and vanilla. Add the dry ingredients to the bowl with the wet ingredients and whisk just until incorporated and few lumps remain. Set aside to rest for 30 minutes.

Preheat a waffle iron. Fill waffle wells and cook according to the manufacturer�s instructions. Cook until crisp and golden. Serve immediately.
