Ground Beef Enchilada Pasta

This was the best pasta I have had in a while.

I LOVE Mexican food and this tastes like an enchilada, in pasta form!
The sauce is to die for.
Ground beef, penne pasta, enchilada sauce, what else can I say.
It was really easy to make and ready in no time at all.

Ground Beef Enchilada Pasta

 Ingredients
1 pound ground beef
 2 garlic cloves (minced)
1 medium onion (diced)
 1 (4 ounce)  can diced green chilies
� teaspoon salt
2 teaspoons chili powder
1 teaspoon cumin
2 (10 ounce) cans green chili enchilada sauce
1 (10 ounce) can red enchilada sauce
2 cups shredded cheese, I used cheddar
1 cup sour cream
1 (16 ounce) package penne pasta
Additional toppings
green onions
tomatoes
sour cream
black olives
cilantro
 Cook penne pasta according to package directions and set aside. Meanwhile, cook ground beef, onions and garlic over medium heat in a large deep skillet until ground beef is browned. Drain off the drippings and return to the beef to the skillet. Add the green chilies, cumin, chili powder, salt, green enchilada sauce and red enchilada sauce. Bring to a boil, reduce heat and simmer for 8-10 minutes. Add the cheese and stir until melted. Reduce the heat to low and stir in the sour cream until well incorporated. Cook on low until heated through. Place pasta in a large serving bowl, pour the sauce over the pasta and mix well. Serve with toppings such as green onions, tomatoes, black olives, cilantro and sour cream.We added additional cheese to ours also. ENJOY
